Ranch sauce ¼ cup
Wheat flour ½ cup
Milk ½ cup
Chicken breast 2 pieces
Grated cheese 1 cup
Chicken egg 2 pieces
Greens 1 bundle
Cooking instructions 2 hours
1 Boil the chicken breasts, cool, cut into pieces.
2 Mix the milk, ranch dressing, flour and eggs together until smooth.
3 Cut up your favourite herbs. In my case it is cilantro.
4 Grate the cheese.
5 Mix the chicken, cheese, part of the coriander and the milk/egg mixture together with the flour. Do not pour all of the mixture out. Pretend you are dressing a salad. We’ll need the rest of the mixture later. The leftover cilantro will also come in handy.
6 Lightly dust the muffin tin with flour. Spoon out the chicken. Add the remaining milk and egg mixture with the flour.
7 Bake in the oven until tender (about 20 minutes) at 180 degrees.
8 Sprinkle the remaining cilantro on top of the finished muffins.
9 Cool down and you can serve. They can be nicely topped with salsa.
