Dorada 1 piece

Sea salt 500 g

Lemon 3 pieces

Cooking instructions 1 hour

1 Remove the guts from the dorado fish, leave the head and tail where they belong.

2 Spread 500 grams of salt evenly on the tray. Cover the salt with lemon slices all over the salt.

3 Put a slice of lemon under the gills of the fish. Place the fish on the tray (directly on the lemon slices). A couple of thin lemon slices can be added on top. Rosemary leaves can be added to taste.

4 Put in the oven for 50 minutes at 125-130 degrees top and bottom heat.

5 Remove from the oven and enjoy the deliciously tender dorado meat!

Recipe tip * The lemon can be replaced with grapefruit. Also delicious!
