Butter 3 tablespoons

French baguette 16 pieces

Wheat flour 3 tablespoons

Dark ale ½ cup

Milk ¼ cup

Dry mustard 1 teaspoon

Ground black pepper pinch

Egg yolk 1 piece

Cheddar cheese 170 g

Cooking instructions 10 minutes

1 Preheat the grill.

2 Brush one side of the bread with 2 tablespoons of butter and place on the grill, butter side up. Grill until golden, about 1 to 4 minutes.

3 Melt the remaining butter in a frying pan over a low heat. Add the flour and stir for 1 minute. Then add the ale and milk and whisk in the mustard, pepper and grated cheese.

4 Bring to a gentle boil over a low heat, stirring, and cook for 2 minutes until smooth.

5 Remove from the heat and quickly incorporate the yolk.

6 Serve the toast with the cheese sauce.
