Potatoes 2 pieces

Olive oil 3 tablespoons

Red onion 1 head

Frozen spinach 280 g

Chicken egg 8 pieces

Salt to taste

Ground black pepper to taste

Cooking instructions 30 minutes

1 Peel the potatoes and cut them into small cubes. Boil them in boiling salted water until soft, about 8 minutes. Drain.

2 Heat the olive oil in a frying pan over a medium heat. Add the finely chopped onion and sauté until soft, 5 minutes. Add the potatoes and cook, stirring, until golden, about 5 minutes. Add the defrosted and lightly squeezed spinach, salt and pepper.

3 In a bowl, lightly beat the eggs and pour into the pan. Fry, stirring, until the eggs are soft, about 5 minutes.

4 Put the pan under the grill and brown on top for 1 to 2 minutes. Cut into segments and serve.
