Extra virgin olive oil ¼ cup
Lemon 2 pieces
Dried oregano 1 tablespoon
Garlic paste 1 tablespoon
Paprika 2 teaspoons
coarse salt 1.5 teaspoons
Freshly ground black pepper ½ teaspoon
Fillet of chicken breast 6 pieces
Cooking instructions 30 minutes
1 In a small bowl, mix the olive oil, juice and grated lemon zest, oregano, garlic, paprika, salt and black pepper.
2 Place the breasts in a mould and pour over the marinade. Stir and flatten. Cover with clingfilm and leave to rest for 1 to 2 hours.
3 Preheat the grill or brazier. Grease the grill grate with oil.
4 Place the chicken on the wire shelf and roast for 8 to 12 minutes, turning over, until cooked and brown. Cool slightly and serve warm.
