Milk 300ml

Starch 1 tablespoon

Gelatin 40 g

Cooking instructions 50 minutes

1 Heat the milk and whisk in the starch. The liquid should be like a thick fermented porridge. Add 20 grams of gelatine soaked in cold water, stir and pour into a large flat dish. Try to remove any bubbles from the surface. If you have a torch, you can use it to burn the surface and they will disappear. Put the dish in the refrigerator for about twenty minutes.

2 Soak another 20 grams of gelatine. Heat half a litre of water and dissolve the gelatine in it.

3 Cut patterns and shapes from the vegetables or fruit and, wetting them in the gelatine water, arrange them on a plate. Then pour the resulting picture over the same water – and allow to stand in the refrigerator until solidified.
