Papaya 1 piece
Buckwheat honey 2 tablespoons
Lime 4 pieces
Fresh mint 10 g
Basil 10 g
Cooking instructions 15 minutes
1 Cut a ripe papaya in half, spoon out the black, beluga caviar-like seeds from the core.
2 Grate the lime zest, squeeze the juice from the lime and mix with the honey.
3 Pour this sauce over the papaya halves, sprinkle with the chopped mint and basil leaves and lime zest. Leave to marinate for ten minutes in the refrigerator.
Recipe tip Papaya has a reputation as the most effective protein and fat burner. The enzyme papain, which the fruit contains in abundance, seems capable of breaking down even concrete masonry. For ease of eating, the papaya can be peeled of its tough, inedible peel beforehand.
