Pumpkin 600 g
Manna grits 50 g
Soft non-fat cottage cheese 250g
Chicken egg 3 pieces
Cinnamon pinch
Sugar substitute to taste
Cooking instructions 1 hour
1 Peel the pumpkin, cut into small pieces, put it into a saucepan, pour 150 ml of water over it and stew until soft (about 20-30 minutes). I boiled stevia leaves and stewed in this.
2 In a bowl, beat the eggs until frothy.
3 Add the soft curd (I had Valio 0%) and continue to whisk. At this stage you can add sweetener to taste (tablets, orphan topinambur 2-3 tablespoons, honey 2-3 tablespoons, your choice).
4 Add the semolina and soft pumpkin to the bowl and whisk until smooth, adding the spices.
5 Preheat the oven to 170 degrees (allow the semolina to swell a little).
6 Bake for about 40-50 minutes until golden. Serve warm or chilled.
