Ingredients portion 1

Spaghetti 150g

Mussels 100g

Onions 1 head

Garlic 2 cloves

Tomato paste 4 tablespoons

Dried basil 1 teaspoon

Paprika ½ teaspoon

Black pepper to taste

Salt on the tip of a knife

Tomato juice 50ml

Cooking instructions 20 minutes

1 Chop the onion and garlic finely and sauté in a saucepan with the olive oil until softened. Add the tomato paste, juice and spices and cook over a medium heat for about 5 minutes. Purée, return to the heat and add the mussels. Cook for 3-5 minutes (I would strongly advise against cooking for longer than this as the mussels tend to turn to rubber very quickly).

2 Boil the spaghetti in just the right amount of boiling salted water, then put it on a colander.

3 Heat a little olive oil in a frying pan and fry the spaghetti for 3 minutes. Add the sauce, stir vigorously, reduce the heat and cover. The pasta is ready after 2 minutes.

4 Sprinkle with finely chopped parsley, if desired.

Recipe tip The number of ingredients is based on a single, but very impressive portion, or two small ones. However, if you are planning to have lunch-dinner for two or even more people, the number of ingredients should definitely be increased.
