Garlic 2 cloves
Cauliflower 300 g
Tomatoes in their own juice 800 g
Young courgettes 400 g
Thyme ½ teaspoon
Pasta 150g
Cooking instructions 20 minutes
1 Finely chop the garlic. Heat 1 tablespoon of vegetable oil in a heavy-based pan. Put in the garlic and fry until fragrant, about 1 minute.
2 Add the mashed tomatoes with their juice and 700 ml water. Bring to the boil, add the pasta and simmer for about 5 minutes. While the pasta is boiling, dice the courgettes. Cut the cabbage into small florets.
3 After 5 minutes of pasta cooking, put the vegetables and thyme into the pot, salt and pepper to taste. Cook until the vegetables are cooked through, about 5-7 minutes.
